HERE’S HOW TO MAKE IT

 

Ingredients

  1. Pork Collar Butt
  2. Prosciutto
  3. Parmesan Cheese
  4. Butter
  5. Garlic
  6. Carolina Gold Rub

 

Method

  1. Butterfly Pork Collar Butt
  2. Layer Prosciutto & top with Parmesan Cheese
  3. Roll into a log & tie tightly with twine
  4. Melt the butter & mix in minced Garlic
  5. Rub garlic butter mix over pork log & coat with Carolina Gold Rub
  6. Get the spear ready for the rotisserie
  7. Set BBQ up for indirect cooking
  8. Place pork log on the spit
  9. Cook until internal temperature reaches 80 degrees oC
  10. Rest, Slice & Serve
