MAKE THE PERFECT PULLED PORK
Ingredients
- 1 Pork Collar Butt
- Carolina Gold Rub
- BBQ Sauce
- 4 Brioche Bread Rolls
- ½ Cabbage
- 2 Apples
- ½ Red Onion
- ½ Cup Mayonnaise
- 2 Tablespoons Apple Cider Vinegar
- 2 Tablespoons Dijon Mustard
Method
- Heat Smoker To 130 Degrees Celcius
- Liberally Rub Pork In Carolina Gold Rub
- Smoke In Indirect Heat Until Internal Meat Temperature Reaches 74oC
- Remove From Smoker & Wrap In Alfoil Then Return To Smoker
- Continue To Cook Until Internal Meat Temperature Reaches 96oC
- Remove From Smoker & Rest For 15 Minutes Still In Alfoil
- Remove From Alfoil, Pull Pork & Add Bbq Sauce To Taste
