MAKE THE PERFECT PULLED PORK

 

Ingredients

  1. 1 Pork Collar Butt
  2. Carolina Gold Rub
  3. BBQ Sauce
  4. 4 Brioche Bread Rolls
  5. ½ Cabbage
  6. 2 Apples
  7. ½ Red Onion
  8. ½ Cup Mayonnaise
  9. 2 Tablespoons Apple Cider Vinegar
  10. 2 Tablespoons Dijon Mustard

 

Method

  1. Heat Smoker To 130 Degrees Celcius
  2. Liberally Rub Pork In Carolina Gold Rub
  3. Smoke In Indirect Heat Until Internal Meat Temperature Reaches 74oC
  4. Remove From Smoker & Wrap In Alfoil Then Return To Smoker
  5. Continue To Cook Until Internal Meat Temperature Reaches 96oC
  6. Remove From Smoker & Rest For 15 Minutes Still In Alfoil
  7. Remove From Alfoil, Pull Pork & Add Bbq Sauce To Taste
