HERE’S HOW TO MAKE IT
Ingredients
- Boodua Creek Smoked Chipotle Rub
- Quality Corned Beef
- Butter
- Rye Bread
- Swiss Cheese
- Sauerkraut
- 1000 Island Dressing
Method
- Rub the Corned Beef with Chipotle Rub
- Set BBQ to 150 degrees oC
- Smoke Corned Beef until internal temperature reaches 80 degrees oC
- Allow to cool slightly & slice thinly
- Toast the Rye Bread on one side only in a buttered cast iron pan
- Apply 1000 island dressing to both pieces of Rye Bread on the non toasted side & top with Swiss Cheese
- Pile up corned beef & Sauerkraut on one slice of Rye Bread & place other piece of Rye Bread on top
