HERE’S HOW TO MAKE IT

 

Ingredients

  1. Boodua Creek Smoked Chipotle Rub
  2. Quality Corned Beef
  3. Butter
  4. Rye Bread
  5. Swiss Cheese
  6. Sauerkraut
  7. 1000 Island Dressing

 

Method

  1. Rub the Corned Beef with Chipotle Rub
  2. Set BBQ to 150 degrees oC
  3. Smoke Corned Beef until internal temperature reaches 80 degrees oC
  4. Allow to cool slightly & slice thinly
  5. Toast the Rye Bread on one side only in a buttered cast iron pan
  6. Apply 1000 island dressing to both pieces of Rye Bread on the non toasted side & top with Swiss Cheese
  7. Pile up corned beef & Sauerkraut on one slice of Rye Bread & place other piece of Rye Bread on top
